Meet your 2016 DinnerPartyYVR Hobby Chefs: Jason Pleym

Jason Two Rivers“Meat” Jason Pleym, Founder of Two Rivers Specialty Meats, and new DinnerPartyYVR hobby chef. As the founder of Vancouver’s most notable purveyor of local, responsible, and hormone and antibiotic free meats, Jason is sure to add a carnivorous touch to this year’s event.

“At Two Rivers, we collaborate with committed local farms, ranches, producers and families to provide quality wholesale meats to restaurants and markets throughout the city,” says Jason. “I’m so excited to give back to the local food community that makes it all happen”.

This year, Jason will be showing off his cooking “chops” at the Cressey Dinner Party, crafting up a selection of dishes in the state of the art CresseyKitchen. He is excited to be cooking with his Two Rivers team, who are set to open their retail location in North Vancouver later this year.

“We are diving head first into the planning of our store front,” he explains. “DinnerPartyYVR will be a really good opportunity to collaborate with my team in the kitchen before we hit the ground running”.

We can’t give away any hints to Jason’s top-secret menu for the Cressey Dinner Party so for his tip he’s sharing steps on how to cook the perfect steak!

Jason Pleym’s Quick and Easy Steps for the Perfect Steak:

1. Temper the steak on a plate in your kitchen for about 15 minutes per 1/2 inch/1.5CM

2. Season the steak liberally with salt and pepper

3. Preheat your grill before placing your steak. The hotter the better.

4. Allow the steak to grill until it comes off the bars easily with a good mark on it. Turn it over and continue to cook and move it in this fashion. Do not close the lid.

5. Once it is cooked nearly to your liking, remove it to a cooling rack, re-season it with finishing salt, and allow it to rest in the kitchen for half of the amount of time it took to grill.

6. Slice or serve whole with a good sharp knife

Proceeds from the Cressey Dinner Party will go to supporting Atira Women’s Resource Housing Society, Cressey’s returning charity partner. Jason is also proud to support Potluck Café Society at this year’s event.

“Potluck provides thousands of free, healthy meals to our city’s most nutritionally vulnerable residents every year. Two Rivers is committed to supporting these local, ethical, and sustainable initiatives that do so much for our community.”
