When you first discover that you cant eat food that contains wheat, you go through a period of mourning. We all have different favourite foods that we have to say goodbye to cookies, muffins, pastries, pancakes and, of course, freshly baked breads.
Imagine our delight at WE Vancouver when we received a box of Cloud 9 products. All the cookies and biscotti disappeared quickly in a communal love-in but it wasnt until the weekend that we could try the New Westminster specialty bakerys gluten-free substitute flour mix. The taste test? Sunday morning pancakes with maple syrup.
Using a standard recipe and simply replacing the all-purpose flour with Cloud 9s gluten-free version ($10.75 for a 1kg bag), the result was surprisingly light and fluffy, and even more flavourful than traditional pancakes. Thank you!

Cloud 9 Gluten-Free Chocolate Chip Cookies
1 3/4 cups (250 g) C9 gluten-free flour
1/2 tsp. (2 g) baking soda
7/8 cup (154 g) butter
1/2 cup (110 g) sugar
3/4 cup (135 g) brown sugar
1 tsp. salt
2 tsp. vanilla
1 large egg
1 large egg yolk
250g bag of chocolate chips
Optional: 3/4 cup of chopped walnuts, pecans, almonds, peanuts any nut of your choice
Preheat oven to 375; adjust rack to the middle of the oven. Line two cookie sheets with parchment paper. Whisk C9 flour baking soda together and set aside. Melt butter.
Mix melted butter together with sugar, brown sugar, and vanilla. Whisk until fully incorporated, add the egg and yolk then whisk again (no lumps!) Let mixture stand three minutes, whisk again complete this process two more times. Stir in the C9 flour, chocolate chips and nuts, if included. Using a #9 cookie scoop, scoop 16-18 cookies onto the prepared sheets. Bake 10-12 minutes at 375; cookies should be puffed and golden with edges set. Let cookies cool completely and enjoy!
