Lets raise a toast to Vancouvers Mexico Fest! Adelitas Traditional Mexican Food (5178 Victoria Drive) shares its recipe for a non-alcoholic Mexican drink.

TEPACHE

1 pineapple

1 kg dark sugar

5 litres water

Cut off the top leaves of the pineapple and wash the rind very well. Do not take off the rind. Cut the pineapple into pieces and put the pieces in a large container (with lid). Add the sugar and water and secure the lid tightly. Let the mixture sit for four days (not in the fridge.) Drain the liquid and pour it as a drink over lots of ice. Discard the pineapple pieces. Enjoy!
