Vancouver's Antise is already known for its handmade panettone, a sweet Italian bread popular at Christmastime.
The established online bakery, founded by award-winning pastry chef Emiddio Isernia, has enjoyed success and established a fan base in Vancouver, and Antise's baked goods are sold at several high-profile local Italian restaurants.
Now the business is poised to take a major step. Antise Pastry Lab is set to open as a brick-and-mortar space in Gastown.
Situated at 360 Carrall St (inside a former salon space), Isernia is hoping to have Antise open this fall.
Isernia likens the current process of building out the space and business to Italy's "Mela Annurca" apple tree. It's "something that with dedication and patience aims to reach the right 'ripening point,'" describes the pastry chef on social media.
