Vancouver has a new restaurant that's all about udon

Featuring handmade udon noodles, fresh broth, and tempting side dishes

A new restaurant specializing in udon, the thick wheat-based Japanese noodle, has recently opened its doors in Vancouver.

Motonobu Udon is located at 3501 East Hastings Street, and quietly began dishing up their udon offerings in early August.

The work of local Japanese chef Shin Iwamoto, Motonobu's udon noodles are handmade in house, using a special custom flour blend, and twice-aged.

"A good bowl of udon starts with the broth," explains the restaurant. They make fresh broth daily at Motonobu to pair with their noodles. One popular traditional hot udon dish is Kitsune Udon, which features dashi with noodles, seasoned fried tofu, pink-swirl narutomaki fish cake, and scallions. At Motonobu look for a dashi swimming with tempura shrimp, udon, seaweed, scallions, and more.

Cold udon is a summertime staple, ideal for cooling down on hot days.

For their specialty selections, the chef is applying his French and Japanese training to create exciting fresh features for Motonobu's menu. Look for creamy udon topped with egg, and an assortment of side dishes.
