It's been nearly a year since the Michelin Guide awarded a single star to eight Vancouver restaurants, among them the critically acclaimed Published on Main.
Open since the end of 2019, Published quickly captured the hearts and palates of locals and visitors to Vancouver alike, and shot to the top of many a "best of" dining lists in its debut year. The restaurant has maintained its status as one of the city's premier dining destinations.
Known for its modern dishes drawn from European culinary traditions with a focus on ingredients sourced from the Pacific Northwest, Published's menu changes with the seasons - though some components remain fan-favourite fixtures.
To that end, an early August meal showcases stunning summer produce from British Columbia, like sweet corn and juicy peaches. Tomatoes, squash, and foraged mushrooms are also being showcased by Published's Executive Gus Stieffenhofer-Brandson and the restaurant's talented culinary team.
Diners at Published can opt to walk in and nab a seat at the elegant bar to enjoy a cocktail or glass of wine alongside the restaurant's a la carte menu. Guests can also make reservations for a table to enjoy the tasting menu - which kicks off with an assortment of the restaurant's dishes reinterpreted as "snack" versions - or order off the regular menu.
Recently, the Michelin Guide updated its Vancouver recommendations - not stars! - to include a few more of the city's restaurants in anticipation of the announcement of its 2023 awards this fall. The Guide shines a spotlight on restaurants it recommends, as well as value-driven picks (in a category called "Bib Gourmand"), in addition to awarding one, two, or three stars.
Will Published retain its star? It seems pretty likely.
