Ice cream sandwiches are the ultimate summertime treat, but have you ever had one made with a concha?
A concha is a sweet Mexican bread that looks like a shell. It's a popular breakfast food, but cut in half, it works great to hold together a unique kind of ice cream sandwich, too.

Local Mexican bakeshop, or pananderia, Metate specializes in these breads, and on Saturday, June 23, they're having a pop-up event starring their pan dulce and concha ice cream sandwiches.
The Pan Dulce & Concha Ice Cream Sandwich Pop Up is happening from 9 am to 1 pm at their commissary space at 417 Industrial Avenue in Vancouver.
