Some significant names in the Vancouver dining scene have joined forces for a forthcoming new restaurant project inspired by the four elements.
Top Chef Canada alum Vish Mayekar, who recently helped get Elio Volpe off the ground on the heels of a successful run heading up the kitchen at La Tana and Pepino's, has teamed up with Zarak's Hassib Sarwari and Winne Sun to launch Elem. Mayekar is currently the culinary director of Cocktails & Canapes catering in Vancouver.
Elem, which "promises to blend international influences with a commitment to local, sustainable ingredients," according to a media release, will occupy the space at 2110 Main St, situated adjacent to Zarak, the critically acclaimed modern Afghan restaurant in Mount Pleasant.
Zarak is a sibling to Sarwari's Afghan Kitchen venture, which has enjoyed great success in South Surrey. Recently, the restaurant made headlines for one of its famous guests, actor Owen Wilson.
The vision for Elem is reflected in the four elements: earth, water, fire, and air.
“Our goal is to respect and celebrate what comes from Earth, Water, Air, and Fire, and always strive to do it in a way that honours the environment,” says Mayekar.
Elem breaks it down as follows:
● Earth reflects a dedication to local produce, honouring local farmers and their seasonal bounty.
● Water captures a passion for seafood.
● Fire introduces bold flavours and traditional cooking techniques, including smoked elements and slow-cooked dishes inspired by Indian culinary practices.
● Air influences the restaurant’s style and atmosphere, embodying fluidity and constant evolution.
The restaurant's menu will be designed by Mayekar, who will debut about a dozen a la carte dishes to start, with special features.
Sun, who has risen to prominence at Zarak for her innovative drinks, will craft Elem's bar program, which will launch with about a dozen specialty cocktails.
Currently, the Elem space is undergoing renovations and Glasfurd & Walker are doing the restaurant's branding. Architect Marko Simcich is designing Elem's interior as a reflection of the "four elements" concept.
"The space will embody a sense of openness and constant change, offering guests something new with each visit," states the restaurant's media release.
