After two years of serving freshly toasted bread with all kinds of toppings, Preservatory Provisions & Toast Bar is saying goodbye to its stall inside the Granville Island Public Market.
"Our lease is ending, and as we close this chapter, we’re excited to focus all our energy on creating more innovative flavours with our Preservatory brand," shared owner Lee Murphy on the business' Instagram.
It was a full-circle move for Murphy and her Preservatory, as the August 2022 launch of the Toast Bar marked a return to the Market - one of the original vending spaces for her Vista D'Oro line of jams and preserves. The products took their name from the farm itself, Vista D'Oro.
The Langley-based farm and winery, purchased by Lee and Patrick Murphy in 1997, boasts orchards and vineyards, producing crops they deploy into their many products, including pickles and jams - all things preserves.
Lee Murphy quite literally "wrote the book" on the subject; her cookbook The Preservatory was released in the spring of 2017.
The Murphys described their Granville Island Preservatory concept as "a hyper-local specialty food market and casual stand-up toast cafe."
There, customers can shop from shelves stocked with preserves and other foods, and order from a menu of toasts with "elevated" toppings, including products sourced from other Public Market vendors, like cheese from neighbours Benton Bros.
In the closure announcement on social media, Lee Murphy says customers will still be able to find their products from Benton Bros at the Public Market.
"Thank you for the amazing memories and your support, it’s meant the world to us," Murphy adds.
Preservatory's last day of business at the Granville Island Public Market will be Sunday, September 15.
