Earlier this year a group of friends set out on a venture to create a Vancouver take-out and delivery restaurant specializing in chicken parmigiana sandwiches and fries, with an aim to run the concept out of a commissary kitchen.
But plans change, and while the chicken parms are still going to be golden-fried and cheesy, Burdy is taking flight on wheels.
Burdy is now a bright yellow solar-powered food truck - or, more specifically, bus - that is set to make its debut.
The team behind Burdy is comprised of "four friends who have previously worked together in the food industry and frequently got together and would come up with new recipes just to try," they explain. Most of them hail from Ontario, where chicken parm sandwiches are popular, and they realized it's something missing from the Vancouver food scene.
"We decided to come up with our own spin on the chicken parm recipe, and after coming up with a chicken and an eggplant sandwich we realized it was something we wished we could have ordered on the spot and delivered to us," a rep for Burdy told us.
Burdy says now they got a hold of the vehicle in April and have retrofitted the interior to allow for deep frying.
Of course, the deep fryer is clutch (cluck?) to this operation with its focus on fried chicken or eggplant parm and seasoned fries on the side.
The Burdy Chicken Parm Sandwich is made with fried chicken, tomato sauce, your choice of house-made basil or spicy mayo, parmesan and mozzarella cheese, on a toasted Portofino potato bun. The Eggplant Parm Sandwich is stacked the same, swapping chicken for double-stacked fried eggplant with the addition of fresh arugula.
They're also offering Caesar salad and for dessert, tiramisu.
Burdy has teamed up with Vancouver's Container Brewing and will be on the brewery's lot full time.
"We have loved getting to know the team over there and we are excited for the future," says Burdy.
The yellow chicken parm-slinging bus will have a soft launch June 7 through 9 from 2 p.m. until sold out and will have its official opening Thursday, June 10.
Burdy's permanent hours at Container Brewing, following the three-day soft launch, will be Monday to Wednesday 3 to 8 p.m.; Thursday and Friday 3 to 8 p.m.; and Saturday and Sunday noon to 8 p.m. Container Brewing is located at 1216 Franklin Street.
