The team behind one of Vancouver's most acclaimed restaurants is adding a second venture to its portfolio next year.
Over the weekend, operators of one Michelin star St. Lawrence shared on social media they are at work on a new concept called Chez Celine.
Very few details have been revealed so far, but Chez Celine is positioned as "a French affair" with "a kitchen of honest cuisine. Friends, family — everyone in between."
The teaser also puts the new spot in Vancouver's Fraserhood, though chef/owner J-C Poirier did specify in an Instagram comment that it would be Fraser at 27th, which means it's very likely (though unconfirmed) that Chez Celine is sliding into the recently-vacated (and fellow Michelin Guide peer) Say Mercy!
Say Mercy! took over the corner spot at 4298 Fraser St (yes, at 27th) for a January 2020 debut, but held its last service on Nov. 2, 2024. In mid-December, the commercial realtors of "Vancouver Restaurant Brokers" posted on Instagram that the ex-Say Mercy! space had been sold.
The news has many locals and folks in the Vancouver hospitality industry quite excited. Chez Celine has launched an Instagram account where operators have said the planned opening timeline is for Spring 2025. Follow @chezcelinerestaurant for more updates.
